USING the WHOLE NUTMEG was a mystery to me since this is my first time. I was just grating the entire nut -which wasn't awful. What I learned from a cooking website is that the proper way is to "take your whole nutmeg and crack the shell open by smashing it. I find that pressing the nutmeg on a wood cutting board with the flat edge of a knife the best way to crack the shell." Alrighty then.
I also learned that the outer part (before you crack the seed) is what's called Mace. I actually have some ground mace from a place here on Amazon and I LOVE it. Apparently, it's the inner part of the seed that is the nutmeg part. Who knew?
Cracking the nutmeg is almost impossible using a little hammer (and not trying to damage my counter or floor), but squeezing it is easier. Just be careful to place the tool and seed inside a baggie before squeezing so that nutmeg doesn't fly all over your kitchen. Yep, I did this. The upside is that my kitchen immediately smelled AMAZING.
I am not sure if the inside of the seed is supposed to be softer or not (mine wasn't) but it was just as hard as the uncracked nut while I was grating it.
GRATING it is not awful, I didn't have a special tool so I used the little grater that came with a set. It might even be the right tool because it's too small for me to use anything else. To be honest, I had been using it to prop up pans when my burner was crooked...
